Bread Sauce

  • 0.5 pint Milk
  • 1 Onion
  • 1 Bay Leaf
  • 6 Whole Peppercorns
  • 1 Whole Clove
  • 50 g Breadcrumbs
  • 50 g Butter


  1. Pour the milk into a small non-stock saucepan, add the chopped onion, bay leaf, peppercorns and the clove.
  2. BrIng all to the boil then leave to cool for a few minutes.
  3. Strain into a bowl containing the breadcrumbs, then stir in the butter and season well.
  4. Keep warm until needed. Before serving add more breadcrumbs if it seems too thin or add a little more milk or cream if it becomes too thick.
