Cauliflower Cheese

Ingredients

  • 1 Cauliflower
  • 25 g Butter
  • 25 g Plain Flour
  • 300 ml Milk
  • 50 g Parmesan


Method

  1. Grate the parmesan and weigh out the other ingredients ready before you start.
  2. Cut the cauliflower into florets and boil it for about 8 mins, or until tender.
  3. While the cauliflower is boiling, make the sauce. To do this, melt the butter in a small saucepan and then whisk in the flour.
  4. Remove the pan from the heat and then whisk in the milk. Add a little bit at a time, especially to start with. Once the sauce has thinned, you can add the milk more quickly.
  5. Return the pan to the heat and simmer until it thickens. Keep stirring occasionally so that it doesn't burn on the bottom.
  6. When the sauce is nice and thick add about three quarters of the cheese (you can guess) and plenty of salt and pepper.
  7. Arrange the cooked cauliflower into an oven proof dish and tip the sauce over it. Make sure all the cauliflower is covered.
  8. Put the remaining cheese on the top and cook it for about 20 mins at 200°C.
