Hot Aubergine And Bacon Pasta Sauce

  • 2 tablespoons Extra Virgin Olive Oil
  • 1 Aubergine
  • 8 Rashers Streaky Bacon
  • 2 cloves Garlic
  • 0.25 teaspoon Hot Chilli Powder
  • 2 tins Chopped Tomatoes
  • 2 teaspoons Balsamic Vinegar


  1. Cut the aubergine into cubes and chop up the bacon.
  2. Heat the oil in a large pan and add the aubergine along with plenty of salt. Cook for about 8 mins, until it is soft.
  3. Add the bacon. Once the bacon is cooked, add crushed garlic and the chilli powder and let these cook for a minute.
  4. Add the tomatoes and balsamic vinegar and cook for 10 minutes without a lid. Stir regularly.
  5. Once the sauce has thickened, serve with pasta.
