Butter Bean And Pesto Soup

  • 2 tins Butter Beans
  • 0.9 litre Vegetable Stock
  • 4 tablespoons Tomato Puree
  • 4 tablespoons Pesto


  1. Drain and rinse the butter beans and put them in an large pan.
  2. Pour in the stock and bring to the boil.
  3. Reduce the heat and stir in the tomato puree and pesto.
  4. Cover and simmer for 5 mins.
  5. Blend the soup until smooth.
  6. Heat through and serve.
