Blackcurrant Slices

  Cooking temperature: 180°C



  • 225 g Self Raising Flour
  • 1 teaspoon Baking Powder
  • 75 g Margarine
  • 150 g Soft Brown Sugar
  • 1 Egg
  • 150 ml Milk
  • 200 g Blackcurrants
  • 175 g Brown Sugar
  • 50 g Self Raising Flour
  • 50 g Melted Butter


  1. Pre heat the oven.
  2. Grease a swiss roll tin and line it with greaseproof paper.
  3. Put the larger amount of flour, baking powder, margarine, soft brown sugar, egg and milk into a bowl and whisk together with an electric whisk.
  4. Pour the mixture into the swiss roll tin and smooth it out.
  5. Scatter the blackcurrants over the mixture.
  6. Make the topping by mixing the brown sugar, remaining self raising flour and melted butter. Then sprinkle this over the fruit.
  7. Bake for 40 mins or until the top is golden brown and firm.
  8. Leave to cool and then cut into slices and dust with icing sugar.
