Chocolate Cookies

Ingredients

  • 100 g Plain Chocolate
  • 100 g Unsalted Butter
  • 150 g Brown Sugar
  • 1 Egg
  • 0.5 teaspoon Vanilla Extract
  • 175 g Self Raising Flour
  • 0.5 teaspoon Bicarbonate of Soda


Method

  1. Melt the chocolate.
  2. Add the butter to the melted chocolate and stir until it is completely smooth. Then stir in the sugar and leave aside to cool for about 5 mins.
  3. Beat the egg with the vanilla and add this to the chocolate mixture.
  4. Add the bicarbonate of soda and flour and mix well.
  5. Cover the bowl with cling film and chill for about an hour. This will make it become firm.
  6. When you are ready to bake the cookies, preheat the oven and roll the dough into golf ball sized balls.
  7. Place each ball of dough on a baking sheet - remember to space them out well as they will expand to about 10-12cm each.
  8. Bake for 8-10 mins and leave to cool on the baking sheet.
