Chocolate Meringues

  Cooking temperature: 180°C

Makes/Serves: individual meringues


  • 4 Egg Whites
  • 200 g Caster Sugar
  • 2 tablespoons Cocoa powder
  • 40 g Dark Chocolate
  • 1 teaspoon Balsamic Vinegar


  1. Heat the oven to 180°C. Chop the chocolate and put aside for later. Line a baking sheet with parchment paper.
  2. Whisk the egg whites until they form soft peaks.
  3. Whisk in the sugar a spoonful at a time. The meringue should be stiff and shiny.
  4. Fold in the cocoa powder, chopped chocolate and balsamic vinegar.
  5. Put blobs onto the baking sheet. Alternatively, you can put it on the sheet into one large meringue (for a pavlova, for example).
  6. Put in the oven and immediately turn it down to 150°C.
  7. After one and a quarter hours, turn the oven off and leave the meringues in there until the oven is cold.
