Courgette And Lime Loaf

Makes/Serves: large loaf


  • 225 g Self Raising Flour
  • 1.5 teaspoons Ginger
  • 170 g Caster Sugar
  • 2 Eggs
  • 4 tablespoons Sunflower Oil
  • 1 Lime
  • 170 g Grated Courgettes
  • 85 g Icing Sugar


  1. Line a loaf tin with greaseproof paper.
  2. Sift the flour and stir in the ginger and sugar.
  3. Grate the zest off the lime and juice half of it. Reserve the remaining half of the lime to make the topping.
  4. Put the lime zest, juice, oil and eggs in a separate bowl and mix together.
  5. Mix the wet ingredients with the dry ingredients and then fold in the grated courgettes.
  6. Tip it into the loaf pan and level off. Bake for 45 mins. A skewer will come out clean when it is done.
  7. To make the topping, mix the icing sugar with the remaining lime juice. Drizzle this over the cooled loaf.
