Meringue Icing

Makes/Serves: Cupcakes


  • 3 Egg Whites
  • 175 g Caster Sugar
  • 1 teaspoon Cornflour
  • 0.5 teaspoon Vinegar
  • 0.5 teaspoon Vanilla Extract


  1. Beat the egg whites until they are very stiff.
  2. Gradually beat in the cornflour, sugar, vanilla and vinegar.
  3. Top your cupcakes with the meringue icing - you can spread it with a knife or use a piping bag. You will have a better effect if you can get peaks to form.
  4. Grill for just a few minutes so that the peaks start to turn golden brown.
