Vanilla Cookies

Makes/Serves: biscuits


  • 200 g Butter
  • 150 g Caster Sugar
  • 2 Egg Yolks
  • 400 g Plain Flour
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Milk


  1. Take the butter out of the fridge to soften beforehand. Line some baking trays with parchment paper.
  2. Beat the butter and sugar until soft and fluffy.
  3. Beat in the egg yolks.
  4. Mix in the vanilla extract, followed by the flour.
  5. Mix in the milk and then use your hands to bring it together to a soft dough. Add a little extra milk if required.
  6. Roll out to about 5mm thick and cut out using whatever cookie cutter shape you wish.
  7. Place the biscuits on the lined baking trays and bake them for 15-20 mins. They will be a pale golden brown when done.


You can use cinnamon and mixed spice instead of vanilla for a more festive flavour.
