Bechamel Sauce

I've had this recipe scribbled on a post-it note and stuck into a book next to a moussaka recipe for years. When I make lasagne, I use the same recipe, but of course I have trouble finding it as it's not with lasagne in my book! Time to get it written up then...

Half a litre of milk will make enough to top a moussaka for 4 people. For lasagne, you will need a bit more so you can put some in the middle layers too.

Ingredients

  • 500 ml Milk
  • 60 g Butter
  • 40 g Plain Flour
  • 60 g Parmesan

Method

  1. Add all the ingredients to a saucepan and season well.
  2. Whisk continuously over a gentle heat until it starts to simmer and thickens.
  3. Turn it down and continue to cook for a further 10 mins or so.
  4. Stir in the grated parmesan.
