Chocolate And Raspberry Cookies

Ingredients

  • 250 g Gluten Free Plain Flour
  • 50 g Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1 Egg
  • 0.5 teaspoon Vanilla Extract
  • 120 g Margarine
  • 200 g Caster Sugar
  • 100 g Chocolate chips
  • 100 g Frozen Raspberries

Method

  1. Measure the flour, cocoa powder and baking powder and use a whisk to thoroughly mix them.
  2. In a small dish beat the egg with the vanilla extract and set aside.
  3. Melt the margarine and then put into a large mixing bowl and whisk in the sugar.
  4. Then whisk in the egg and vanilla.
  5. Fold in the flour mixture, followed by the raspberries and chocolate chips.
  6. Cover and chill for about an hour.
  7. Use an ice cream scoop to portion into balls onto lined baking trays.
  8. Bake for about 20 mins at 170°C and then leave to cool on the tray.
