Courgette, Feta And Mint Baked Frittata
I use a small pie dish, which is about 18cm in diameter. Don't stress too much about the weights of everything - you can guess. If the courgettes are picked early and are small then use two.
Ingredients
- 1 Courgette
- 3 Eggs
- 0.25 teaspoon Ground Pepper
- 1 tablespoon Chopped Mint
- 50 g Cheddar Cheese
- 75 g Feta
- 2 Spring Onions
Method
- Grate the courgette, put it in a colander and sprinkle it with salt. After a few mins squeeze out the excess liquid. Wrap it in a clean tea-towel and squeeze to get it as dry as you can.
- Cube the feta, grate the cheese, chop up the spring onions and mint.
- Grease your dish and put the feta, courgette, onion and cheddar in - reserve some of the grated cheese to sprinkle on the top.
- Add the eggs, mint and pepper to a bowl and whisk together, then tip into the dish and top with the reserved cheese.
- Bake for 35 mins at 160°C
