Method
- Roughly chop the peanuts, then put them in a fairly large bowl with the ground almonds, chia seeds, protein powder and rice krispies. Give it a good mix together.
- Weigh the golden syrup and sugar into a saucepan and heat up to dissolve the sugar.
- Turn off the heat and then mix in the peanut butter. There should be enough heat left in the pan to melt it in.
- Beat in the egg - the peanut butter should have cooled the mixture enough that it doesn't cook the egg at this point.
- Tip in the dry ingredients and mix together well.
- Press down into your mould. I use a silicon mini loaf pan, but you can use a muffin pan or any other shaped mould.
- Bake for 15 mins at 150°C and then leave them to cool in the moulds.
You can substitute the peanut butter for any nut butter and you can swap out the rice krispies for cornflakes, oats or more nuts!
