Coffee And Walnut Cupcakes

Makes/Serves: cupcakes


  • 70 g Walnuts
  • 2 tablespoons Strong Coffee
  • 175 g Self Raising Flour
  • 1.5 teaspoons Baking Powder
  • 175 g Unsalted Butter
  • 175 g Caster Sugar
  • 3 Eggs


  1. Roast the walnuts for about 8 mins and then finely chop them.
  2. Get your cupcake cases laid out ready before you start mixing.
  3. Put the flour, baking powder, sugar, butter and eggs in a bowl and mix together with an electric mixer.
  4. Fold in the coffee and walnuts.
  5. Divide the mixture between the cupcake cases.
  6. Bake for about 17 mins.
