Valentines Cupcakes

Makes/Serves: cupcakes


  • 200 g Butter
  • 200 g Caster Sugar
  • 2 Eggs
  • 200 g Self Raising Flour
  • 1 tablespoon Cocoa powder
  • 100 g Dark Chocolate
  • 50 g Ground Almonds
  • 1 teaspoon Vanilla Extract


  1. In a large bowl beat the butter and sugar until light and fluffy.
  2. Add the eggs one at a time and beat well.
  3. Stir in the ground almonds then the melted chocolate and vanilla.
  4. Fold in the sieved flour and cocoa powder. The mixture should be soft and glossy, add a little milk if necessary.
  5. Three quarters fill the cake cases and bake for ten to fifteen minutes until well risen and springy to the touch. Leave to cool on a wire tray.

To Decorate

Use a soft icing, such as Chocolate Fudge Icing or Butter Icing. Pipe it on generously using a star shapped nozzle. Finish with chocolate heart decorations and icing roses.
